Just add chicken. (Or tofu, beef, pork, vegetables -- this is the perfect marinade for any protein or vegetable.)
Sweet pineapple, deeply savory miso, fragrant Chinese five- spice. These are the notes that make the Poi Dog Huli Huli sauce sing.
“Huli Huli” means “to turn” and refers to Hawaii’s favorite chickens turning slowly on sizzling spits. Huli Huli smoke is a siren song for people to line up, knowing that their fingers would soon be oil slicked and blackened, tearing into chicken flesh, seasoned with soy, pineapple, and a lot of smoke.
Poi Dog’s Huli Huli sauce grabs all these essences and memories and bottles them – but the sauce is versatile. Use it to baste your chickens, but also give your mushrooms, your vegetables, your burgers, a deep, sweet umami flavor.
Ingredients: pineapple, tomatoes, tamari soy sauce, distilled vinegar, pure cane sugar, white miso, ginger, fresh garlic, Chile guajillo, Chinese 5-spice, shiitake
VEGAN, GLUTEN FREE
About Poi Dog:
“Poi Dog” means “mixed breed” or “mutt” in Hawaiian pidgin and refers to hybrid foodways of the business, which for 7 years served plate lunches, poke bowls and desserts rooted in Hawai’i’s local food traditions.
Poi Dog’s flavors drew from the influences of the Chinese, Filipino, Japanese and Portuguese workers who brought their cuisines to the islands’ sugarcane and pineapple plantations, eventually melding them together to form Hawai’i’s local food.
Poi Dog the restaurant and food truck closed in 2020, but its story continues in this burgeoning line of sauces, encapsulating memories and stories of Hawaii in these bottles.
