Cranberry Ghost Hot Sauce

A winter seasonal built for the holiday table, and a perfect fruity hot sauce for the rest of the year!

Deeply caramelized red onions and tart red apples from Collins Family Orchards form the base, along with a rich Washington Merlot, balsamic vinegar, and warming spices. Next up is Rainier Mountain cranberries and a generous, slightly reckless amount of Southern Exposure ghost peppers, then ferment the whole thing for a month. The result: a bright, sweet-sour pop up front that gives way to a full, long-lasting burn.
